3. Rest the Dough

Form the dough into a ball using your hands and transfer it to plastic wrap. Seal it tightly and place it in the refrigerator to chill for 2–24 hours. This resting time lets the flavors infuse and makes the dough easier to work with.

4. Bring Dough to Room Temperature

After the dough has rested, remove it from the fridge and allow it to warm up to room temperature for about 15–20 minutes. It will still be slightly cool, but easier to roll out.

5. Preheat the Oven & Prepare Baking Sheets

Preheat your oven to 300°F (150°C). Line two baking sheets with parchment paper, cutting the paper to fit the pans.

6. Roll Out the Dough

Once the dough has warmed slightly, divide it into two portions, working with one at a time. Lightly dust a piece of parchment paper (one you lined your baking sheets with) with flour and roll out the dough into a rectangle about 10 x 8½ inches, and ¼–½ inch thick. Trim the rough edges with a pizza cutter to create a neat rectangle.

Tip: Save the dough scraps for another batch of random piece graham snacks! Just bake them on another baking sheet lined with parchment paper alongside the full crackers for a extra crunchy treat.

7. Cut the Dough Into Cracker Shapes

After trimming the dough, you should have an 8 x 7-inch rectangle. Cut it vertically in half, then cut three evenly spaced 2-inch horizontal strips to create 8 graham cracker pieces per portion.

8. Add Final Touches

Brush the tops of each cracker lightly with evaporated milk using a pastry brush. Then, using a large fork, gently poke 5–6 rows of holes along each cracker, from top to bottom.

9. Bake the Crackers

Transfer the parchment paper with the dough onto a baking sheet. Repeat steps 6-8 with the second portion of dough. Place the first baking sheet in the preheated oven and bake for 22–27 minutes, or until the crackers turn a golden-brown color.

10. Cool and Separate the Crackers

Once baked, remove the crackers from the oven. While still warm, use a pizza cutter to slice along the pre-cut lines to separate the crackers fully now that they are cooked. Let them cool completely on the sheet until they’re crunchy and enjoy!
