Sunken Almond Poppy Seed Bread

Can I just say… YUM!!!!

This bread is delicious. The almond flavor is the true star here — showcased in three different ways: almond flour, almond milk, and almond extract. They all work together to create a flavorful, soft, cake-like bread with tons of crunchy little poppy seeds for texture and aesthetics.

Healthy Almond Poppy Seed Bread (Refined Sugar Free Option + High Protein!)

Let’s talk about the “sunken” feature of this cake — thanks to intentional science in the baking process. It creates the perfect little trough that holds all the drizzle perfectly in place, forming a thick, sweeter top puddle over the golden brown, delicious bread. Yes, please!

This recipe brings the kid out in all of us — and it’s delicious at the same time. It’s built around no eggs and extra baking powder, which allows the bread to rise quickly and then sink slightly at the end of the baking process. That creates the “sunken” middle designed to hold all that irresistible glaze or drizzle.

Tell me that’s not fun.

This recipe was also inspired by the almond poppy seed muffins we had growing up in my family. They were the highlight on those days when you came home from school to warm muffins packed with fun little poppy seeds in a soft, cake-like snack.

I wanted to mix a little science (and maybe some math 😉) from those good old days and pair it with the childhood treats we grew up loving.

And as a result… now you can have a slightly healthier piece of your childhood — all to yourself, or to share with your kiddos, friends, or family.

Why This Almond Poppy Bread Is Healthier

This bread is more nutrient-dense than your typical quick bread.

  • The base has no refined white sugar

  • It’s naturally sweetened (with honey)

  • It’s protein-rich thanks to creamy, delicious Greek yogurt

  • It has healthy fats (from the olive oil and almond flour)

Easy Recipe Variations

  • Make It Vegan

This bread can easily become vegan:

  • Use maple syrup or agave as the sweetener

  • Swap in a plant-based yogurt (choose one with some fat for best texture)

  • Use almond milk

And you’re good to go!

  • Refined Sugar Free Option (Even the Drizzle!)

Skip the powdered sugar and make this yogurt drizzle instead:

  • ½ cup Greek yogurt (or the yogurt you’re using in the bread)

  • 2–3 tablespoons milk (more if you want it thinner)

  • 2–3 tablespoons honey or natural sweetener

  • ⅛ teaspoon vanilla extract

Taste, adjust to liking, and drizzle just like you would the original glaze.

  • Make It Gluten Free

Sub a 1-to-1 gluten-free baking flour for the all-purpose flour, and you’re all set!

The Nutrition Highlights

💪 Got Protein?

Dessert (or breakfast!) with protein is the way to go. This quick bread includes a generous amount of plain Greek yogurt, which is naturally higher in protein. I love using yogurt here because the fat content helps your body better utilize those amino acids.

⭐️ Vitamin E Is the Star

Almonds are brimming throughout this recipe. With them comes vitamin E — great for immune support, healthy growth, tissue and skin repair, and energy metabolism.

🌱 It’s Got Fiber

If you’re going to enjoy something sweet, pairing it with fiber helps your body regulate and process it more efficiently. The almond flour and poppy seeds bring plant-based fiber to help balance the natural sugars (and the glaze, if you use it), while also supporting digestion and nutrient absorption.

❤️ Healthy Fats for Balance

Between the olive oil, almond flour, and Greek yogurt, this bread contains healthy fats that:

  • Support energy production

  • Help absorb fat-soluble vitamins

  • Slow sugar absorption

Making this a smarter treat — and even a balanced breakfast option too.

When to Serve This Almond Poppy Seed Bread

  • Breakfast: Pair with protein-rich yogurt, fresh fruit, or eggs. Keep the rest of the meal lower in added sugar for a well-balance meal option.

  • Healthier Dessert: Serve with fresh strawberries for brightness and color — it makes this dense, cake-like bread even more beautiful (and delicious).

  • After-School or Work Snack: Perfect for kiddos, family, or friends. It’s one of those snacks that makes you reach for a glass of cold water — which I fully support for hydration and digestion!

  • Brunch, Showers, or Gatherings: Bridal showers, baby showers, holidays, or festive brunches — this one is can be that hit. It tastes indulgent but has better-for-you ingredients.

  • Or honestly… whenever you need it.

How to Make This Almond Poppy Seed Bread

Step 1: Preheat your oven to 350°F and grease a 9x5-inch or 8.5x4.5-inch loaf pan. Set it aside.

Step 2: In a medium bowl, whisk together the dry ingredients: all-purpose flour, almond flour, poppy seeds, baking powder, and sea salt.

Step 3: In a large bowl, whisk together the wet ingredients until smooth and fully combined: olive oil, honey, Greek yogurt, almond milk (or regular milk), and almond extract.

Step 4: Pour the dry ingredients into the wet ingredients. Gently fold together with a spatula or spoon until just combined. Be careful not to overmix — this keeps the bread soft and tender.

Step 5: Pour the batter into the prepared loaf pan and smooth out the top. Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean and the bread is nice and golden brown on top.

Step 6: Remove from the oven and let the bread cool in the pan for about 5 minutes. Then transfer it to a wire rack to cool completely.

Step 7 (Optional Drizzle): In a small bowl, whisk together the powdered sugar, milk, and almond extract until smooth. Drizzle over the fully cooled bread.

Slice and serve! Or, if you're like me, chill the loaf and enjoy it once the drizzle has hardened slightly on top. Absolute perfection. 💛
