How to Make this Harvest Pasta Salad
Step #1 - Cook the Pasta: Bring a large pot of water to a boil. Once boiling, add the pasta and cook according to package instructions until al dente. *Drain and rinse the noodles thoroughly with cold water until cool to the touch. Pour the noodles into a large bowl. *(Rinsing stops the cooking process and keeps that perfect al dente texture!)
Step #2 - Mix the Dressing: While the noodles are cooking, prepare the dressing. Place all dressing ingredients into a small bowl and whisk together, or add them to a medium jar, secure the lid, and shake vigorously until well combined and cohesive.
Step #3 - Toss and Serve: Add the pear pieces, arugula, feta cheese, dried cranberries, roasted pecans, and pumpkin seeds to the bowl with the noodles. Pour half of the dressing over the top. Using a large spoon, gently toss to coat and distribute everything evenly. Add more dressing to your liking, then serve right away or chill in the fridge until ready to enjoy. (Chilling for a bit helps the flavors meld together for the best taste and texture!)
