This recipe features tender rotisserie chicken, nutrient-dense spinach, sweet garden tomatoes, and a creamy, homemade basil tzatziki sauce. Ingredients
For the Wraps:
Spinach or regular burrito/wrap-size tortillas (10 to 12 inches)
Cooked & chopped rotisserie chicken
Fresh spinach
Cherry tomatoes
Parmesan or mozzarella cheese
For the Basil Tzatziki Sauce:
A small cucumber
Plain thick Greek yogurt
Fresh basil
Olive oil
Lemon juice
Garlic powder
Sea salt
Optional Add-On:
Red pepper flakes (for a little Italian heat!)
How To Make These Tuscan Chicken Wraps
Step 1: Make the Basil Tzatziki Sauce. Place the grated cucumber in a small-medium bowl and press a paper towel down over it to absorb a good amount of the moisture. Repeat until excess moisture is removed. Stir in the Greek yogurt, olive oil, fresh basil, lemon juice, garlic powder, and sea salt until smooth, creamy, and evenly distributed.
Step 2: Assemble and Wrap. Lay out both tortillas and spread a generous amount of the basil tzatziki sauce onto the center of each, leaving a 1-inch border around the edge. Layer on the chopped chicken, quartered cherry tomatoes, fresh spinach, and cheese. Fold in the sides, roll up tightly, cut in half, and enjoy!
