How To Make These Pancake Bites
Step 1
Preheat the oven to 400°F (200°C). Generously spray a 24-count mini muffin tin with cooking spray, making sure each cavity is fully coated to help prevent sticking. Set aside.
Step 2
In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and sea salt until combined.
Step 3
In a separate medium bowl, whisk together the buttermilk, melted butter or coconut oil, agave or maple syrup, lightly beaten eggs, and vanilla extract until smooth.
Step 4
Pour the wet ingredients into the dry ingredients. Stir gently with a spoon or spatula until no flour pockets remain. Avoid overmixing, as this can make the pancake bites tough instead of soft and fluffy.
