How to Make These Flavorful Little Crostinis
Step 1: Prepare the Oven
Preheat the oven to 450°F broil (230°C) and line a baking sheet with foil. Set aside.
Step 2: Make the Grape Reduction
In a small saucepan, combine the grapes, honey, balsamic glaze or reduction, and a pinch of sea salt. Place over medium-low heat and stir to combine.
Let the mixture simmer and bubble gently while the grapes soften and the sauce thickens, stirring frequently, for about 15–18 minutes.
Once cooked, remove from the heat. Using a fork or potato masher, lightly mash the grapes into the thickened reduction sauce. Let the mixture sit and cool slightly while you prepare the goat cheese and bread. The sauce will continue to thicken as it cools.
Step 3: Make the Whipped Honey Goat Cheese
Add the goat cheese to a microwave-safe bowl and microwave for 10–15 seconds, just until slightly softened. Add the honey and a pinch of sea salt. Using a whisk or hand mixer on medium speed, whip the goat cheese mixture until smooth, creamy, and fully combined, about 1–2 minutes. Set aside.
Step 4: Toast the Crostini Bread
Place the 1-inch sliced baguette pieces onto the prepared foil-lined baking sheet, spacing them evenly apart. Drizzle the tops generously with olive oil or use a pastry brush to coat each slice evenly.
Place into the preheated oven and broil for 3–4 minutes, until the bread is crisp with golden brown edges. Keep a close eye on them — the bread can burn quickly under the broiler!
Remove from the oven and let cool for a couple of minutes.
Step 5: Assemble the Crostini
Once the bread has cooled slightly and is no longer hot, place the slices onto a serving plate or platter.
Spread about ½ tablespoon to 1 tablespoon of the whipped honey goat cheese onto each slice. (I personally love extra goat cheese, so I usually add closer to 1 tablespoon — but if you prefer a lighter flavor, feel free to use a little less!)
Spoon the grape reduction and sauce over the top of each crostini and serve immediately while fresh.

It’s simply a thicker consistency than regular balsamic vinegar, which helps create that perfect “glaze” effect instead of a thin liquid. You need the sauce thick enough to soak slightly into the bread without running everywhere!
I like to use smaller grapes because they resemble concord grapes more closely, but you can use whatever size you’d like — just avoid green grapes since the flavor and color don’t work as well for this recipe.
