This is a special recipe I created for my mom, who had to feed around 350 people this summer for a church youth activity! How to Make Creamy Italian Pasta Salad
Step 1: Boil the Pasta - Bring a large pot of water to a boil. Cook the pasta according to the package directions until al dente. Drain and rinse thoroughly with cold water until the noodles are cooled all the way through. Transfer the cooled, drained noodles to a large serving bowl.
Step 2: Whisk the Dressing - While the noodles are cooking, mix the sauce. In a small bowl, combine the Italian dressing, Greek yogurt, Zesty Italian dry mix, and dried parsley. Whisk until completely smooth and cohesive.
Step 3: Toss and Combine - Pour the creamy Italian dressing over the noodles in the serving bowl, along with the diced bell peppers and shredded carrots. Use a large spoon to toss everything together until the pasta salad is evenly coated.
Step 4: Chill and Serve: Place in the refrigerator to chill until ready to serve, or dive right in. Enjoy!

The "Two-Step" Dressing Trick: I like to add ¾ of the dressing when I first make it and chill it. Right before serving, I toss it with the remaining ¼ of the dressing for the ultimate pop of flavor and sauciness!
Pepper Choice: I lean toward orange or red bell peppers—they give the exact natural sweetness this recipe needs to balance out the zesty Italian dry mix. Green and yellow are ok too.
